When the leaves start turning red, we feel like cooking up some comforting recipes. Our businesses in Lanaudière have their own classic recipes that they were happy to share with us!
Pumpkin stew with sausages by Pascale de La Courgerie
Ingredients
- 15 ml (1 tablespoon) olive oil
- 1 chopped onion
- 2 cloves garlic, minced
- 1 can (about 500 ml) white beans, drained and rinsed
- 15 ml (1 tablespoon) cilantro
- Salt and pepper, to taste
- 500 ml (2 cups) squash, sliced
- 250 ml (1 cup) beef broth
- 8 charcuterie sausages
Preparation
- Preheat the oven to 350°F (180°C). Heat the olive oil in a skillet and sauté the onion and garlic for about 5 minutes, until golden brown. Add the beans and cilantro. Season with salt and pepper.
- Place the squash slices in an ovenproof dish. Add the onions and garlic. Pour in the broth and place the sausages on top. Cover.
- Bake for 1 hour.
SWEET AND SAVORY BREAD WITH APPLES FROM QUI SÈME RÉCOLTE
Cooking time: 40 minutes
Servings: 8
Recommended apples: any variety
Ingredients
- 2 cups (500 ml) flour
- 1 teaspoon (5 ml) baking powder
- 1/2 teaspoon (2.5 ml) baking soda
- 1/2 teaspoon (2.5 ml) ground cinnamon
- 375 ml (1 1/2 cups) grated cheese (cheddar, gouda, or other hard cheese)
- 2 eggs
- 125 ml (1/2 cup) maple syrup
- 375 ml (1 1/2 cups) apples, peeled, cored and grated
- 250 ml (1 cup) diced ham
- 60 ml (1/4 cup) chopped walnuts
- Oat flakes, to taste
Preparation
- Preheat the oven to 190°C (375°F).
- In a bowl, combine the flour, baking powder, baking soda, cinnamon, and cheese.
- In another bowl, beat the eggs and maple syrup until the mixture is creamy and smooth.
- Stir in the dry ingredients. Add the apples, ham cubes, and walnuts. Mix.
- Spread into a buttered and floured 9 x 5-inch (23 x 13 cm) baking pan. Sprinkle with oat flakes.
- Bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool, remove from pan, and cool on a wire rack.

NATHALIE'S SWEET APPLES FROM QUI SÈME RÉCOLTE
Hollow out the center of an apple or cut the apple in half and remove the core (the seeds).
Fill the apple halves or the center of the apple with a mixture of whatever you have on hand, for example:
- Peanut butter / almond butter / hazelnut butter
- Maple syrup or caramel
- Dried fruit and chopped/crumbled nuts or granola.
Bake on a baking sheet at 350 degrees for 20 minutes.
Enjoy as is, with vanilla ice cream or a drizzle of hot cider. A simple delight!
